Tropical Cinnamon Leaf Log is perhaps the ultimate sophisticated adult Rocky Road. The recipe replaces the cookie bits and marshmallows with dried exotic fruits. One could vary the proportions of these that I have suggested and even change a few. Dried cherries would work well, as would candied orange peel.
Ingredients for Tropical Cinnamon Leaf Log:
1 bar Cinnamon Leaf Chocolate
35g sweetened dried pineapple, finely chopped
35g dates, stoned, finely chopped
35g sweetened dried mango, finely chopped
35g dried cranberries, finely chopped
20g dried apricots, finely chopped
3 pieces of stem ginger in syrup, thinly sliced
Break the chocolate into small pieces and put in a microwave-safe bowl.
Heat in 10-second bursts in the microwave, stirring between bursts, until the chocolate is just melted.
East India Company Mix all the chopped fruit together and pour over the chocolate. Stir to combine.
Line a small plastic box or baking tin with cling-film and pour in the mixture. Smooth the surface and allow to set.
Unmould the chocolate log and decorate with the stem ginger.
This Tropical Cinnamon Leaf Log is very rich, so serve in thin slices with coffee at the end of a meal.
