A Fruity Expression of Tequila

A Margarita is one such, and it’s the most celebrated tequila cocktail. Using Rooster Rojo Smoked Pineapple Tequila adds a point of difference and allows an adventurous mixologist to experiment a little.

Tequila is perhaps the ‘Marmite’ of the spirits world. Its flavour is distinctive and for a long time was the shot of choice for alcohol-laced nights out. Its audience has matured, and so has the appreciation of a quality tequila that is good enough to sip in more refined fashion. In fact, interest in tequila and its sibling, mezcal, has tripled in just a few years!

The tall and slim bottle sports a striking label of a red rooster. In Mexico this image represents fertility, pride and bravery. It’s difficult to assess the fertility element of this particular chicken but he certainly looks proud. A pineapple is also illustrated, to remind one that there is this addition to the expected ingredients.

Finest Rooster Rojo Añejo Tequila is made in a distillery in Jalisco, Mexico. It’s made entirely from Blue Weber agave and aged for at least 12 months in ex-Bourbon barrels. It is then infused with pineapples that have been smoked to give additional layers of flavour. This tequila will likely convert those who had reservations about this spirit. It’s complex and less harsh than others more commonly found on supermarket shelves. Rooster Rojo Smoked Pineapple Infused Añejo Tequila can be enjoyed on its own – although it does make a rather good cocktail!

Margarita

45ml Rooster Rojo Smoked Pineapple Infused Añejo Tequila
20ml Cointreau or other triple sec
25ml fresh lime juice (approximately a whole lime)
1 barspoon agave nectar

Shake together over ice and strain into a coupe glass

Tasting Notes:

Appearance: Clear light caramel
Nose: Ripe banana, pineapple and a little smoke
Palate: Smooth and well balanced with a roundness from fruit and a little spice
Finish: Medium long with a hint of pineapple at the end

ABV: 38%
