Pasta Salad with Sweet Vinaigrette

Its early summer and we crave lighter foods. Burpee Europe have seeds for peppers so one can have delicious veggies with no food miles.

Pasta Salad with Sweet Vinaigretteburpee pasta

A light meal on its own, or a tasty side dish.


225g Penne pasta or your favourite pasta shape.
240ml Distilled White Vinegar
2 Tbsp Mustard
1 tsp Worcestershire Sauce
60ml Extra virgin olive oil
3 Tbsp Sugar
1 Medium red pepper, chopped.
2 Celery sticks, chopped
225g Deli-sliced ham or salami


Cook pasta according to pack instructions. Drain and allow to cool.
In a large bowl, whisk together Vinegar, Mustard, Worcestershire Sauce, oil and sugar until mixed well. Season with salt and pepper to taste. Add cooked pasta, peppers, celery and deli meat and toss until well coated. Cover and refrigerate until ready to serve.

Prep Time: 10 minutes
Cook Time: 12 minutes

TIP: Can be made a day in advance. Cover and store in fridge. Toss lightly before serving.

TIP: If preferred, substitute Distilled White Vinegar with Apple Cider Vinegar, decreasing amount of sugar to 2 Tbsp.
