If you’re a fan of parsnips, you’ll love this side dish, which adds a heady edge to the natural sweetness of one of the best-loved of root vegetables.
parsnips, peeled and halved lengthways
3 tbsp olive oil
1½ tsp ground cumin
4 tsp fresh thyme leaves
Preheat the oven to 200C/400F/Gas 6.
Toss the parsnips with the olive oil and cumin and put in a baking tray. Sprinkle with thyme and roast for 45 minutes or until golden. Serve.
