Meaty Treats from the EU and Friends

We are lucky to live in Europe with its shared values of all things delicious. The EU Fab 6 project promotes wonderful products including a selection of meats – and just in time for spring celebrations.

EU-Salami EU Fab 6 projectThe Consorzio Zampone e Cotechino Modena PGI (Italy) protects a culinary history of more than 500 years. The PGI status indicates that its recipe and production are preserved under Italian and European law. Cotechino is a delicious chunky sausage which was traditionally boiled for hours. Now this juicy meat preparation comes sealed and ready to eat in less than half an hour.

Cotechino Modena is often enjoyed at New Year when it is served with lentils, representing financial good fortune for the following months. It’s a versatile preparation and can be made into a ragu to fill pasta, to top baked potatoes, or let your imagination play with this unique and flavourful product.

History goes back hundreds of years

The Consorzio Italiano Tutela Mortadella Bologna guards the integrity of this popular meat. The Italian Consortium was founded in 2001 and includes the major producers of Bologna cured meat. It is a soft meat made from a traditional recipe of ground pork and seasonings, and is characteristically dotted with rich pork fat. Its mild flavour will tempt the whole family, and it makes the perfect addition to any buffet. Its history goes back hundreds of years and is the most celebrated product of the city of Bologna.

The Consorzio Cacciatore Italiano was founded in 2003 to promote Salamini Italiani alla Cacciatora DOP throughout the world. This iconic sausage is typical of those found in Italian delicatessen internationally. These small salamis are convenient for picnics: soft, sweet and full of flavour.
