Rooster Rojo twists some classics for Tequila Day

It’s Tequila Day on 24 July and to mark the day, Rooster Rojo Tequila has created some delicious new cocktail serves.

Tequila is a big new trend here in the UK, and is perfect for high summer. Shots are out. Sipping is in.

These fine tequilas are made as they should be – with premium 100% blue agave. There are four in the current range: Rooster Rojo Blanco, Anejo, Reposado, and Smoked Pineapple infused Anejo. The latter is a world-first and is hand-crafted using only the best Spanish Red Pineapples.

These cocktail recipes are fresh and stylish. For two of these recipes a little pre-preparation is needed but once you have the syrups made, these are quick to create and designed to be enjoyed slowly, as the sun sets or on a lazy summer’s afternoon.

First up, a margarita, but not as you know it…

Rooster Rojo Cucumber and Jalapeno Margarita

Ingredients

40ml Rooster Rojo Reposado Tequila

5ml Agave syrup

10 ml Pierre Ferrand Orange Curacao

25ml Lime juice

20ml Cucumber syrup*

Piece of jalapeno (about 3cm)

Method

Adorn half the rim of a chilled Margarita glass with pink salt and pepper. Shake with ice and double strain. Garnish with a twist of lime zest, an olive oil leaf if available, and edible flowers.

*To make the cucumber syrup

Blend a whole cucumber and strain off 200ml of the resulting liquid. Combine with 150g of caster sugar and stir either leaving to sleep for 24 hours, stirring occasionally or for quicker results put in a pan, slowly heat until the sugar has dissolved, strain and cool.

Rooster Rojo Batanga

Ingredients

Pinch of salt plus extra to rim the glass

60ml Rooster Rojo Tequila Blanco

15ml lime juice

Cola to top up

Method

Rim the outside edge of a tall Collins glass with salt. Stir a pinch of salt with the lime juice and stir to dissolve. Add ice cubes with the remaining two ingredients, and stir. Garnish with a wedge of lime.

Rooster Rojo Peach Pie Ball

Ingredients

35ml Rooster Rojo Anejo Tequila

15 ml Peach liqueur

10ml Lime juice

20 ml Thyme syrup*

100ml Soda Water

To make the thyme syrup

*Infuse 50gm of thyme in a 1:1 simple syrup for 24 hours, then strain.

Method

Build the drink in a skinny high ball glass filled with cubed ice and garnish with sprigs of fresh thyme and a grilled peach slice.
