This is a smooth gin with zesty Australian botanicals. It would complement your favourite tonic water, but is the perfect base for all gin cocktails. It took the team dozens of attempts to settle on their final recipe for Papa Salt. There are notes of native wattleseed – the seed of the Australian Acacia tree – with peppercorn, juniper, floral hibiscus and citrus peel, as well as oyster shell adding minerality. Papa Salt Coastal Gin was developed in partnership with Lord Byron Distillery in Byron Bay.
