The mineral-laced character of the wine is a product of the soil that contains high proportions of mineral-rich clay and marine fossils. The Chablis region is found between Paris and Beaune where the climate is pleasantly cool, which is ideal for dry, white wines with high acidity.
The main Chablis Appellation d’Origine Contrôlée was designated at the start of 1938. All the vineyards in the region are covered by four appellations with different classifications. These note the differing compositions of soil and geography. AOC Chablis is the largest appellation.
