The Champagne region is famed for its eponymous naturally-fermented sparkling wine method. This process is now used in South Africa and has become known as Cap Classique. Villiera Wines is one of Stellenbosch’s wine family dynasties. It produces quality Cap Classique sparkling wine and this Villiera Brut Cap Classique is a fine expression of their efforts.
Villiera Brut Cap Classique is a great-value Champagne-method sparkling wine and is a blend of traditional Chardonnay and Pinot Noir grapes which rest for around 18 months on lees for extra complexity. The resulting wine offers hints of toasted bread, apples and citrus. It has balanced acid, making it the perfect pairing for oysters and cheese as well as those savoury nibbles one enjoys with pre-dinner drinks. Serve chilled and appreciate the vibrant bubbles. This would be my choice for a pairing with mild smoked salmon and a composed salad for a summer lunch.
