Buying a bottle of spirits is often a bit like going to the library and choosing a book. You don’t know much about the content, but the cover is very nice. Santa Ana Gin is the equivalent of that volume on the shelf which catches the eye. It’s the spirit version of that good read which you don’t want to finish. Santa Ana Gin is a spirit page-turner.

Santa Ana Gin seduces with its perfectly crafted bottle. It has Art Deco lines with a label pointing to its tropical inspiration. It gives a nod to the popular dancehall days of 1920s Manila and the legendary Santa Ana Cabaret on Santos Street. This opened in 1921 and was once the largest in the world. The original Santa Ana Cabaret was destroyed by a typhoon in 1970, but we have this delightful bottle which pays homage to that stylish and iconic establishment.

Santa Ana Gin is made via partial-vacuum distillation, a technique mastered in the Charente region of France. This method lends the ability to extract a concentration of botanical aromas without destroying the delicate flavours. The Filipino botanicals are what create the point of difference and they include Ylang-Ylang and Calamansi lime. Juniper, coriander, lemon, bitter orange, angelica root and orris root for a hint of sweetness complete the tropical mix, along with other local botanicals used for flavour and fragrance.

This complex yet well-balanced gin is a delicious base for any of your favourite cocktail recipes. Yes, it’s great in a Martini but try it in the classic French 75, which dates back to just before the opening of the Santa Ana Cabaret.

Ingredients

1 tbsp lemon juice
1 tsp simple syrup
50ml Santa Ana Gin
Cava to top off

ice
lime wedge for garnish

Method

Pour the lemon juice, sugar syrup and gin into a cocktail shaker half-filled with ice.

Shake well to chill then strain into a champagne coupe and finish with cava or sparkling wine of your choice. Garnish with a thin lime wedge.
