Idahoan Veggie Moroccan Shepherd’s Pie

Exotic comfort.

It’s cold out there and we crave comfort food… hot comfort food. Winter meals don’t have to be complicated, and especially when it’s close to Christmas and we all have so many other calls upon our time. Idahoan Perfect Mash is a delicious support, and One-pot Veggie Moroccan Shepherd’s Pie is bound to become a family favourite, even for those meat-eating members!

Serves 4

Filling

350g veggie mince
1 white onion, peeled and diced
2 cloves garlic, minced
1 sweet potato, peeled and diced
1 can chickpeas
100g peas
1 tbsp za’atar
1 tbsp cinnamon
2 tbsp tomato puree
Salt and pepper to season
2 tbsp olive oil

Harissa Mash Topping

1 tbsp harissa paste
1 packet Idahoan Butter & Herb Perfect Mash

Method

  1. Preheat the oven to 200°C (fan).
  2. Place an oven-safe casserole pot on the hob and sauté the diced onion and sweet potato in the 2 tbsp olive oil for a few minutes.
  3. Add the minced garlic and cook for about a minute before adding in the za’atar, cinnamon and tomato puree, stirring to coat everything in the pan.
  4. Add the veggie mince and cook for 2-3 mins.
  5. Add the entire can of chickpeas, including the water, followed by the peas and season to taste.
  6. Remove from the heat and set to one side.
  7. Prepare the Idahoan Mash, following the packet instructions, then stir in the harissa paste.
  8. Top the mince filling with the mash, spread evenly and place the whole thing in the oven for 30-35 minutes until slightly golden on top.
  9. Drizzle with a little harissa-infused oil, sprinkle lightly with za’atar and serve alongside some cooked green veg of your choosing.
