Beef and Beans Tacos

Adding spices to no-salt added tomato sauce creates a flavorful, spicy taco and keeps sodium to a low 210 mg per serving; and swapping beans for some of the traditional meat adds fiber and reduces fat and calories!



Nonstick cooking spray
1/2 lb 90% lean ground beef
1/2 cup chopped onion
1/2 tsp minced fresh garlic
1 (8-oz) can Stop & Shop no-salt-added tomato sauce
1/2 to 1 tsp chili powder
1/2 tsp ground cumin
1 tsp dried oregano
1/4 tsp black pepper
1 15.5-oz) can black beans, rinsed and drained
8 white corn tortillas
1-1/2 cups shredded lettuce, cold and crisp
1 cup chopped tomato
1/2 cup chopped green onions
1/2 cup fat-free sour cream



Spray a large, heavy nonstick skillet with nonstick cooking spray. Crumble beef into skillet. Brown beef and onion, over medium heat, until beef is no longer pink.

Add garlic and cook only until fragrant, about 30 seconds. Reduce heat and stir in tomato sauce, chili powder, cumin, oregano, pepper and beans. Cover and simmer 5 minutes.

Meanwhile, in a separate skillet, warm tortillas according to package directions.

Serve beef/bean mixture in tortillas. Top each with lettuce, tomato, onions and sour cream.
