I am too often disappointed by what I find in the supermarket, but then Higgidy comes to the rescue. Their new Free-Range Chicken, Mushroom and Thatchers Cider Pie is another addictive winner.

The Higgidy story began back in 2003 when Camilla Stephens, co-founder of Higgidy, noticed a gap in the market for gourmet yet accessible pies. In 2006 Camilla, James and Mark made the decision to create a brand for their already popular pies. After bouncing around ideas for a name for the new company with friends and family, one of the kids tasted a pie and described it as being a bit ‘Higgidy,’ and so that memorable brand was born.

Higgidy Chef Jordan Kerridge has worked at the highest-end restaurants and has evidently brought his eye for perfection to the world of Higgidy. These pies wouldn’t seem out of place served on a gilt-edged plate presented on crisp linen by a waiter who doesn’t think you deserve such a baked treat. Luckily, we can skip the drama and enjoy these goods at home.

Great British pie

Jordan is charming and eloquent and displays a passion for Higgidy products. He has introduced imagination and diversity to create pies which offer traditional comfort along with delicious indulgence. He uses the best of healthy ingredients without deviating from those elements which have made the great British pie so, well, great!

This new British free-range chicken, chestnut mushroom and Thatchers Gold® cider pie is baked in shortcrust pastry with an all-butter puff pastry lid and topped with a garlic and thyme crumb. There is butternut squash in that pastry. It’s an unexpected addition but it works. The flavours are well-balanced and the texture of the pastry has the perfect bite. Nice to find a pie with a pastry case that doesn’t seem like an afterthought.

The ingredients in this pie are proper, without the iffy E’s. Free-Range Chicken, Wheat Flour, White Mushrooms, Thatchers Gold Cider™, Butter, Onions, Chestnut Mushrooms, Cannellini Beans, Whipping Cream, Oats, Vegetable Oils (Sustainable Palm Oil, Rapeseed Oil), Butternut Squash Purée, Cornflour, Dijon Mustard, Free-Range Egg Yolk, Garlic Purée, White Wine, Thyme, Yeast Extract, Salt, Black Pepper, Brown Sugar, Chicken Fat, Lemon Juice Concentrate, Leek Powder, Onion Powder, Black Pepper Extract, Sage Extract, Chilli Powder, Paprika.
