It would complement your favourite tonic water, but is the perfect base for all gin cocktails. It took the team dozens of attempts to settle on their final recipe for Papa Salt. There are notes of native wattleseed \u2013 the seed of the Australian Acacia tree \u2013 with peppercorn, juniper, floral hibiscus and citrus peel, as well as oyster shell adding minerality.
