Sit your chicken in a roasting dish, cut your lemon in half and\u00a0<\/span><span lang=\"EN-GB\">place<\/span><span lang=\"EN-GB\">\u00a0inside the cavity of the chicken along with a bunch of thyme sprigs.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">S<\/span><span lang=\"EN-GB\">mear your softened butter on the outside of the chicken\u00a0<\/span><span lang=\"EN-GB\">and<\/span><span lang=\"EN-GB\">\u00a0season generously with salt and pepper. Cover the chicken with foil (this<\/span><span lang=\"EN-GB\">\u00a0<\/span><span lang=\"EN-GB\">stops the skin burning)\u00a0<\/span><span lang=\"EN-GB\">and<\/span><span lang=\"EN-GB\">\u00a0roast in the oven for 1 hour (or to packet instructions).\u00a0<\/span><\/p>\n<\/div>\n<\/div>\n<div>\n<div>\n<p><span lang=\"EN-GB\">After an hour, remove the foil and roast for another 20-30 minutes, until the skin is golden, the chicken is cooked through and the juices run clear.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">Once your chicken is cooked, remove from the oven and leave to rest for 15-20 minutes. Whilst your chicken is resting, prepare your leeks by melting the 20g of butter in a frying pan on a medium heat, then adding your finely chopped leeks and saut\u00e9ing for about 10 mins until soft.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">Whilst your leeks are cooking, add your spring greens to a large saucepan of boiling water and cook for 3-4 mins.<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">Drain your greens, keeping the water for your gravy, then put them back into the saucepan, drizzle over a glug of olive oil and season.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">In a bowl, p<\/span><span lang=\"EN-GB\">repare your Idahoan Perfect<\/span><span lang=\"EN-GB\">\u00a0<\/span><span lang=\"EN-GB\">Mash to packet instructions, then add your soft sauteed leeks to the mash and mix until fully combined.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">To make your gravy,\u00a0<\/span><span lang=\"EN-GB\">mix<\/span><span lang=\"EN-GB\">\u00a0<\/span><span lang=\"EN-GB\">the<\/span><span lang=\"EN-GB\">\u00a0flour into\u00a0<\/span><span lang=\"EN-GB\">the<\/span><span lang=\"EN-GB\">\u00a0chicken roasting tray and place over a low heat on the hob<\/span><span lang=\"EN-GB\">.<\/span><span lang=\"EN-GB\">\u00a0Slowly pour the chicken resting juices into the flour mix. Keep stirring, us<\/span><span lang=\"EN-GB\">ing<\/span><span lang=\"EN-GB\">\u00a0a whisk to get rid of any lumps, then add water from your spring greens to loosen to your d<\/span><span lang=\"EN-GB\">esired thickness<\/span><span lang=\"EN-GB\">.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">To serve, carve your chicken, take a generous spoonful of your mashed potato<\/span><span lang=\"EN-GB\">, add\u00a0<\/span><span lang=\"EN-GB\">a healthy\u00a0<\/span><span lang=\"EN-GB\">portion<\/span><span lang=\"EN-GB\">\u00a0of spring greens, then drizzle with gravy.\u00a0<\/span><\/p>\n<\/div>\n<div>\n<p><span lang=\"EN-GB\">Recipe from Idahoan Perfect Mash.
