Winter meals don\u2019t have to be complicated, and especially when it\u2019s close to Christmas and we all have so many other calls upon our time. Idahoan Perfect Mash is a delicious support, and One-pot Veggie Moroccan Shepherd\u2019s Pie is bound to become a family favourite, even for those meat-eating members!<\/p>\n<h4>One-pot Veggie Moroccan Shepherd\u2019s Pie<img loading=\"lazy\" decoding=\"async\" class=\" wp-image-21900 alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-scaled.jpg\" alt=\"Idahoan Moroccan Veggie Pie\" width=\"439\" height=\"595\" srcset=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-scaled.jpg 1887w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-221x300.jpg 221w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-755x1024.jpg 755w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-768x1042.jpg 768w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-1132x1536.jpg 1132w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-1509x2048.jpg 1509w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2024\/12\/Idahoan-Moroccan-Veggie-Shep-Pie-111x150.jpg 111w\" sizes=\"auto, (max-width: 439px) 100vw, 439px\" \/><\/h4>\n<p>Serves 4<\/p>\n<p>Filling<\/p>\n<p>350g veggie mince<br \/>\n1 white onion, peeled and diced<br \/>\n2 cloves garlic, minced<br \/>\n1 sweet potato, peeled and diced<br \/>\n1 can chickpeas<br \/>\n100g peas<br \/>\n1 tbsp za\u2019atar<br \/>\n1 tbsp cinnamon<br \/>\n2 tbsp tomato puree<br \/>\nSalt and pepper to season<br \/>\n2 tbsp olive oil<\/p>\n<p>Harissa Mash Topping<\/p>\n<p>1 tbsp harissa paste<br \/>\n1 packet Idahoan Butter &amp; Herb Perfect Mash<\/p>\n<h4>Method<\/h4>\n<ol>\n<li>Preheat the oven to 200\u00b0C (fan).<\/li>\n<li>Place an oven-safe casserole pot on the hob and saut\u00e9 the diced onion and sweet potato in the 2 tbsp olive oil for a few minutes.<\/li>\n<li>Add the minced garlic and cook for about a minute before adding in the za\u2019atar, cinnamon and tomato puree, stirring to coat everything in the pan.<\/li>\n<li>Add the veggie mince and cook for 2-3 mins.<\/li>\n<li>Add the entire can of chickpeas, including the water, followed by the peas and season to taste.<\/li>\n<li>Remove from the heat and set to one side.<\/li>\n<li>Prepare the Idahoan Mash, following the packet instructions, then stir in the harissa paste.<\/li>\n<li>Top the mince filling with the mash, spread evenly and place the whole thing in the oven for 30-35 minutes until slightly golden on top.<\/li>\n<li>Drizzle with a little harissa-infused oil, sprinkle lightly with za\u2019atar and serve alongside some cooked green veg of your choosing.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Recipe from Idahoan Perfect Mash.
