This variety has orange-yellow flesh is sweet, nutty and has a smooth texture.<\/p>\n<p>The recipe below has been devised for Burpee Europe by the chef Valerie Hamelin, using &#8216;Burpee&#8217;s Butterbush&#8217; squash.\u00a0 It is sure to bring that cosy feeling of autumn to you in a bowl!<\/p>\n<h3 style=\"text-align: center;\">Spicy Butternut Squash &amp; Coconut Velout\u00e9<\/h3>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-21672 alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/09\/burpee-squash-soup.png\" alt=\"Burpee Squash Soup\" width=\"563\" height=\"375\" srcset=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/09\/burpee-squash-soup.png 778w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/09\/burpee-squash-soup-300x200.png 300w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/09\/burpee-squash-soup-768x512.png 768w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/09\/burpee-squash-soup-150x100.png 150w\" sizes=\"auto, (max-width: 563px) 100vw, 563px\" \/>Ingredients:<\/h4>\n<p>1 Butternut squash \u2013 diced<br \/>\n1 tbsp organic coconut oil<br \/>\n2 garlic cloves \u2013 peeled &amp; finely chopped<br \/>\n1 onion \u2013 peeled and chopped<br \/>\n1 tin coconut milk (reduced fat)<br \/>\n\u00bd litre vegetable stock<br \/>\n2tbsp red curry paste<br \/>\n2 tsp light soy sauce<br \/>\n1 tsp ground cumin<br \/>\n1 tsp ground coriander<br \/>\nSalt &amp; pepper<br \/>\nHandful fresh coriander<\/p>\n<h4>Method:<\/h4>\n<p>Place the seasoned, diced butternut squash on a tray and roast in the oven at 180 degrees until golden and cook for around 25 minutes<\/p>\n<p>In a large saucepan, add the coconut oil with the onions &amp; garlic. Sweat off gently and cook until soft. Add cumin &amp; coriander and stir, cook for another 1 to 2 minutes.<\/p>\n<p>Stir the red curry paste, soy sauce and mix the cooked roasted butternut squash in the pan.<\/p>\n<p>Add the coconut milk &amp; the vegetable stock, bring to simmer and cook until tender<\/p>\n<p>Transfer to a bowl and blitz or alternatively use a food processor and blend it until smooth.<\/p>\n<p>Season to taste<\/p>\n<h4>To serve:<\/h4>\n<p>Place the velout\u00e9 in a soup bowl and garnish with fresh coriander and seeds (pumpkin or sunflower)<\/p>\n<h4>Tip:<\/h4>\n<p>Roasting the butternut squash enhances the flavour giving it a nutty succulent taste.<\/p>\n<p>Burpee DO NOT sell direct to the consumer.
