{"id":17177,"date":"2020-04-06T10:00:00","date_gmt":"2020-04-06T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=17177"},"modified":"2026-02-08T17:14:04","modified_gmt":"2026-02-08T17:14:04","slug":"burpee-feta-pie-with-squash","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/burpee-feta-pie-with-squash\/","title":{"rendered":"Burpee Feta Pie with Squash"},"content":{"rendered":"<p>There is nothing that shows affection more than a delicious home-cooked meal, and if some of the ingredients have also been homegrown&#8230;this will surely earn brownie points in the garden and kitchen!<\/p>\n<p>Burpee Europe breeds the perfect varieties with which a whole array of recipes can be achieved, one of which is the gorgeous Squash &#8216;Early Acorn Hybrid&#8217;.<\/p>\n<p>This variety of squash has productive plants which bear five large, dark-green fruits. The orange-yellow flesh is sweet, nutty and has a smooth texture. &#8216;Early Acorn&#8217; is a brilliant performer in flavour and wide adaptability.<\/p>\n<p>To enjoy this variety why not try this &#8216;Winter Squash &amp; Stilton Pie in Filo Pastry&#8217; recipe below, written for Burpee Europe by chef Valerie Hamelin.<\/p>\n<h4><strong>Ingredients<\/strong><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-17178 alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/04\/burpee-Squash-Stilton-Pie.jpg\" alt=\"Burpee squash\" width=\"473\" height=\"315\" srcset=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/04\/burpee-Squash-Stilton-Pie.jpg 720w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/04\/burpee-Squash-Stilton-Pie-300x200.jpg 300w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/04\/burpee-Squash-Stilton-Pie-150x100.jpg 150w\" sizes=\"auto, (max-width: 473px) 100vw, 473px\" \/><\/h4>\n<p>1 Winter Squash \u2013 Early Acorn Hybrid<br \/>\nOlive oil<br \/>\nSprig thyme<br \/>\n1 small bag spinach leaves<br \/>\n1 onion \u2013 diced<br \/>\n2 garlic cloves- chopped<br \/>\n1 small packet smoked lardons<br \/>\n1 packet filo pastry<br \/>\nButter \u2013 Melted for each layer of filo<br \/>\n1 small pot low-fat cr\u00e8me fraiche<br \/>\n50 gr Stilton cheese<br \/>\nSalt &amp; pepper<\/p>\n<h4><strong>Method<\/strong><\/h4>\n<ul>\n<li>Cut the squash in half and season with olive oil, salt and pepper &amp; thyme. Roast in the oven for 25 minutes at 180 C or until the flesh feels cooked and soft.<\/li>\n<li>Whilst the squash is cooking, heat olive oil in a pan and sweat off the diced onions and garlic, add the spinach and cook until wilted, drain and set aside and cool down.<\/li>\n<li>In a hot frying pan, place the lardons and cook until golden brown and crispy, drain on kitchen roll to remove excess fat.<\/li>\n<li>Spoon out the flesh of the squash, separate some crushed down and some into pieces.<\/li>\n<li>Place the cooled spinach into a bowl, add the cr\u00e8me fraiche, the crushed squash &amp; salt and pepper, mix well. Set aside<\/li>\n<li>Crumb the stilton<\/li>\n<li>Cut the filo pastry into large strips and cut into 10 cm x 10 cm square<\/li>\n<li>To assemble the pie, using a 7cm muffin tin tray. Place 3 buttered filo pastry squares on top of each other. Place the 1st one on a worktop then add the 2nd one to the opposite quarter and the 3rd square on top like the 1st one.<\/li>\n<li>Then press down the filo pastry into the moulds and add the spinach mix on the bottom and topped with the squash pieces and the crumb stilton.<\/li>\n<li>Bake in the oven at 190C for 20 minutes or until the filo is golden brown and the cheese is melted.<\/li>\n<\/ul>\n<p><strong>To serve<\/strong><br \/>\nSimply place the warm pies onto a chopping board with dressed rocket leaves.<br \/>\nThese rich, lovely individual pies are full of hearty flavours and perfect for the autumn season.
