{"id":17054,"date":"2023-06-02T10:00:00","date_gmt":"2023-06-02T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=17054"},"modified":"2023-04-25T15:09:41","modified_gmt":"2023-04-25T14:09:41","slug":"aubergine-fritters","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/aubergine-fritters\/","title":{"rendered":"Aubergine Fritters Recipe with Burpee"},"content":{"rendered":"<p>The Burpee Europe team always love it when they receive a new recipe devised for them by the chef Valerie Haimlin.\u00a0 Soon it will be time to start harvesting early aubergines and the recipe below is the perfect example of how to use these wonderful vegetables.<\/p>\n<p>Our Aubergine &#8216;White Knight&#8217; or &#8216;Green Knight&#8217; can be used in this recipe, or why not use both for an interesting combination?<\/p>\n<p><strong>Aubergine &#8216;White Knight&#8217;<\/strong><br \/>\nShimmery and pearl white in colour, these really are the most fashionable of aubergines!\u00a0 \u00a0These delicious fruits are culinary wonders too and can be used in a whole host of recipes, whether you are planning to roast, sautee or bake them!<\/p>\n<p><strong>Aubergine &#8216;Green Knight&#8217; <\/strong><br \/>\nWhat a combo this variety makes together with &#8216;White Knight!\u00a0 The glossy jade green next to the glowing\u00a0white, is a contrast made\u00a0in heaven. A\u00a0culinary delight in all sorts of recipes, but a &#8216;must-have&#8217; for Asian dishes that call for aubergine due to its traditional style and colour in many parts of the East.<\/p>\n<h3><strong><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-17338 alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/07\/burpee-aubergine.jpg\" alt=\"Aubergine Fritters\" width=\"554\" height=\"369\" srcset=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/07\/burpee-aubergine.jpg 1200w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/07\/burpee-aubergine-300x200.jpg 300w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/07\/burpee-aubergine-768x512.jpg 768w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/07\/burpee-aubergine-1024x683.jpg 1024w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/07\/burpee-aubergine-150x100.jpg 150w\" sizes=\"auto, (max-width: 554px) 100vw, 554px\" \/>Aubergine Fritters Recipe<\/strong><\/h3>\n<p><strong><em>Ingredients:<\/em><\/strong><br \/>\n1 aubergine (eg &#8216;Green Knight&#8217; or &#8216;White Knight&#8217; from Burpee Europe)<br \/>\n1 tsp ground cumin<br \/>\n1 tsp turmeric<br \/>\n1 tsp ground coriander<br \/>\n\u00bc tsp chilli flakes<br \/>\n1 tbsp chopped fresh coriander<br \/>\n50g plain flour<br \/>\n85gr gram flour (chickpea flour)<br \/>\n230 ml cold water<br \/>\n\u00bd tsp salt<br \/>\nVegetable oil for deep frying<\/p>\n<p><strong><em>Method: <\/em><\/strong><\/p>\n<ul>\n<li>In a bowl mix the flours, salt &amp; spices and the cold water to form a smooth batter. Stir in the chilli flakes &amp; the freshly chopped coriander. Set aside for 15 minutes<\/li>\n<li>Top &amp; Tail the aubergines, slice into 1 cm rounds with a sprinkle of salt and set aside. Dry with kitchen roll.<\/li>\n<li>Heat the oil in a shallow pan, to check the temperature of the oil drop a piece of bread and see if it quickly rises to the surface, which means the oil is at temperature.<\/li>\n<li>Whisk the batter gently, the batter is now ready to fry the aubergines. Dip each slice in the batter and ensure both sides are well coated and gently drop them in the oil.<\/li>\n<li>Cook the fritters for 2 to 3 minutes on each side.<\/li>\n<li>Once golden brown, drain with a slotted spoon onto kitchen paper to remove the excess oil.<\/li>\n<\/ul>\n<p><strong><em>To serve:\u00a0<\/em><\/strong><br \/>\nServe the fritters hot with refreshing mint &amp; cucumber yoghurt dip<br \/>\nDelicious!
