Mallards are a small variety and one, with side dishes, is perfect for two discerning diners. The mallards can be found at Wild and Game along with all kinds of free-range quality meat. Keep an eye out for seasonal game and try something new with the changing seasons.<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-17098 alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-and-game-mallard-2.jpg\" alt=\"mallard\" width=\"380\" height=\"242\" srcset=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-and-game-mallard-2.jpg 616w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-and-game-mallard-2-300x191.jpg 300w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-and-game-mallard-2-150x96.jpg 150w\" sizes=\"auto, (max-width: 380px) 100vw, 380px\" \/><\/h4>\n<p>This is a simple recipe made in a slow cooker.<\/p>\n<p>Slow Cooked Mallard with Fruit Jelly<\/p>\n<p>(Use a regular duck if mallard isn\u2019t available)<\/p>\n<p>Serves: 2<\/p>\n<h4>Ingredients<\/h4>\n<p>2 tablespoons olive oil<br \/>\n1 large onion, chopped<br \/>\n2 cloves garlic, crushed<br \/>\n2 tablespoons butter<br \/>\nWild and Game mallard<br \/>\n250ml stock or a combination of stock and Port<br \/>\n125 ml of grape or blackcurrant jelly<br \/>\nsalt and pepper, to taste<br \/>\n2 tsp balsamic vinegar, or to taste<br \/>\n2 tsp cornflour (optional)<\/p>\n<h4>Method<img loading=\"lazy\" decoding=\"async\" class=\" wp-image-17100 alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-mallard.jpg\" alt=\"slow mallard\" width=\"254\" height=\"314\" srcset=\"https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-mallard.jpg 301w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-mallard-243x300.jpg 243w, https:\/\/www.mostlyfood.co.uk\/wp-content\/uploads\/2020\/03\/wild-mallard-121x150.jpg 121w\" sizes=\"auto, (max-width: 254px) 100vw, 254px\" \/><\/h4>\n<p>Preheat the slow cooker to High.<\/p>\n<p>Heat the oil in a wok or large frying pan and fry the onion and garlic till just golden. Remove and set aside.<\/p>\n<p>In the same pan melt the butter and brown the duck on all sides.<\/p>\n<p>Add the onion\/garlic mix and the mallard to the heated slow cooker.<\/p>\n<p>Pour over the stock and jelly, and season.<\/p>\n<p>Put the lid on the slow cooker and cook for half an hour on High. Change the setting to Low and cook for 3 hours.<\/p>\n<p>Remove the duck and add the balsamic vinegar to the sauce; thicken the sauce with a little cornflour if desired.<\/p>\n<p>Serve with vegetables of your choice such as sweet potatoes and beans, or roast potatoes and red cabbage.
