{"id":16101,"date":"2022-12-20T10:00:00","date_gmt":"2022-12-20T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=16101"},"modified":"2022-11-22T14:19:09","modified_gmt":"2022-11-22T14:19:09","slug":"cherry-mince-pies","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/cherry-mince-pies\/","title":{"rendered":"Cherry Mince Pies"},"content":{"rendered":"<p>From Sainsbury&#8217;s<\/p>\n<p>Mince pies topped with meringue and marachino cherries<\/p>\n<p>&nbsp;<\/p>\n<p>Serves: 12<br \/>\nPreparation time: 20 Minutes<br \/>\nCooking time: 23 Minutes<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/cherry%20mince%20pies.jpg\" \/><\/h4>\n<p>125g shortcrust pastry<br \/>\n175g mincemeat<br \/>\n60g marachino cherries, drained and quartered<br \/>\n1 teaspoon lemon juice<\/p>\n<p>1 medium size egg white<br \/>\n50g caster sugar<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Roll out the pastry thinly on a floured surface and use to line twelve 7.5cm patty tins. Prick the bases well and chill for 15 minutes.<\/p>\n<p>Preheat the oven to 200\u00b0C, 400\u00b0F, gas mark 6.<\/p>\n<p>Press a piece of foil into each pastry case and bake blind in the oven for 10-15 minutes. Remove the foil and return to the oven for 2 minutes.<\/p>\n<p>Mix together the mincemeat, 50g of the maraschino cherries and lemon juice. Divide between the pastry cases.<\/p>\n<p>Whisk the egg white until stiff, then whisk in the sugar a tablespoon at a time. Spoon into a piping bag fitted with a 1cm fluted nozzle and pipe a rosette on top of each pie. Top with the remaining cherry pieces.<\/p>\n<p>Reduce the oven temperature to 180\u00b0C, 350\u00b0F, gas mark 4 for 6 minutes or until golden.
