{"id":16068,"date":"2025-07-25T10:00:00","date_gmt":"2025-07-25T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=16068"},"modified":"2025-07-10T11:18:40","modified_gmt":"2025-07-10T10:18:40","slug":"pear-patisserie","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/pear-patisserie\/","title":{"rendered":"Pear Patisserie"},"content":{"rendered":"<p>From Sainsbury&#8217;s<\/p>\n<p>A special pastry for a treat, picnics and traditional Sunday tea.<\/p>\n<p>&nbsp;<\/p>\n<p>Serves: 6<br \/>\nPreparation time: 30 Minutes<br \/>\nCooking time: 30 Minutes<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>500g pack ready rolled puff pastry<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/pear%20patisserie.jpg\" \/><br \/>\nA little beaten egg<br \/>\n50g caster sugar<br \/>\n3 medium size egg yolks<br \/>\n2 tablespoons plain flour<br \/>\n2 tablespoons cornflour<br \/>\n300ml milk<br \/>\n1 teaspoon vanilla essence<\/p>\n<p>200g carton cr\u00e8me fr\u00e2iche<br \/>\n500g pears, peeled, cored and quartered<br \/>\n4 tablespoons water<br \/>\n2 tablespoons lemon juice<br \/>\n4 tablespoons redcurrant jelly<br \/>\nFresh mint<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Unroll the pastry on a lightly floured surface. Cut a strip of pastry from each side of the rectangle. Brush the edges with water and arrange the pastry strips on top, trimming the corners, to form a risen border.<\/p>\n<p>Brush the border with beaten egg and place on a baking tray in a preheated oven 220\u00b0C, 425\u00b0F, gas mark 7 for 10 &#8211; 12 minutes, until risen and golden. Cool on a wire rack.<\/p>\n<p>Meanwhile, whisk together the sugar and yolks until pale then whisk in the flours.<\/p>\n<p>Bring the milk to the boil and gradually whisk in the egg mixture and vanilla essence. Bring to the boil and cook for 1 minute, stirring continually until very thick and smooth. Stir in the creme fraiche and allow to cool.<\/p>\n<p>Place the pears in a pan with the water, lemon juice and redcurrant jelly, simmer for 5 &#8211; 10 minutes turning occasionally until the pears are tender. Remove pears to cool and boil syrup slightly to thicken.<\/p>\n<p>Spoon the creme patisserie into the pastry case and arrange the pears on top.
