{"id":15956,"date":"2025-12-26T10:00:00","date_gmt":"2025-12-26T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15956"},"modified":"2025-12-20T14:38:54","modified_gmt":"2025-12-20T14:38:54","slug":"carrot-cupcakes-with-cream-cheese-frosting","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/carrot-cupcakes-with-cream-cheese-frosting\/","title":{"rendered":"Carrot Cupcakes with Cream Cheese Frosting"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>Decorate Dan Lepard&#8217;s rich carrot cupcakes with mini-chocolate Easter eggs at Easter time, or top with sugar-paste carrots for the rest of the year.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>275g\/9\u00beoz caster sugar<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/carrot_spelt_cupcakes_72408_16x9.jpg\" width=\"343\" height=\"196\" \/><br \/>\n200ml\/7fl oz sunflower oil<br \/>\n4 medium free-range eggs<br \/>\n300g grated carrot, a little more or less is fine<br \/>\nup to 150g\/5\u00bdoz nuts or dried fruit (optional)<br \/>\n225g\/8oz spelt or wholemeal flour<br \/>\n2 tsp baking powder<br \/>\n1 tsp ground cinnamon<br \/>\n1 tsp mixed spice<br \/>\n1 tbsp cocoa powder<\/p>\n<p>&nbsp;<\/p>\n<h4>For the cheese frosting<\/h4>\n<p>125g\/4\u00bdoz unsalted butter, softened<br \/>\n125g\/4\u00bdoz full-fat cream cheese<br \/>\n275g\/9\u00beoz icing sugar<br \/>\nedible decorations (such as sugar-paste carrots or mini-chocolate Easter eggs), to finish<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Preheat the oven to 180C\/350F\/Gas 4 and line the pockets of a muffin tray with muffin cases.<\/p>\n<p>Beat the sugar, oil and eggs in mixing bowl until smooth, then stir in the grated carrot and, if you like, up to 150g\/5\u00bdoz chopped nuts, dried fruit, or a mixture of both.<\/p>\n<p>In a separate bowl combine the flour, baking powder, spices and cocoa so that they&#8217;re evenly mixed, then tip this into the carrot mixture and stir well.<\/p>\n<p>Fill the muffin papers to about two-thirds full, then bake for about 25 minutes, or until a skewer poked in comes out almost clean.<\/p>\n<p>For the frosting, make sure the butter is soft, then, using a whisk or electric mixer, beat it with the cream cheese in a bowl until smooth and light.<\/p>\n<p>Stir in the icing sugar with a spoon until it begins to come together, then whisk again briefly until light and smooth. Pipe or spoon blobs of the frosting on each cold cupcake.
