{"id":15874,"date":"2022-12-16T10:00:00","date_gmt":"2022-12-16T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15874"},"modified":"2022-11-23T13:45:47","modified_gmt":"2022-11-23T13:45:47","slug":"boozy-christmas-pudding","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/boozy-christmas-pudding\/","title":{"rendered":"Boozy Christmas Pudding"},"content":{"rendered":"<p>From Sainsbury&#8217;s<\/p>\n<p>&nbsp;<\/p>\n<p>A pudding that&#8217;s jam packed with fruit and liquor and full of rich festive flavour.<\/p>\n<p>&nbsp;<\/p>\n<p>Serves: 8<br \/>\nPreparation time: 30 Minutes<br \/>\nCooking time: 580 Minutes<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients:<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/Boozy-xmas-pud-188x165.jpg\" width=\"255\" height=\"224\" \/><\/h4>\n<p>140g unsalted butter<br \/>\n100g dried cranberries, plus extra to decorate<br \/>\n150g sultanas<br \/>\n100g pitted dates, chopped<br \/>\n100g dried figs, chopped<br \/>\n100g dried apricots, chopped<br \/>\n175g grated Bramley apple<br \/>\nZest and juice 1 large orange (about 90ml juice)<br \/>\nZest of 1 lemon<br \/>\n3 balls stem ginger in syrup, chopped<br \/>\n75g pecans, roughly chopped<br \/>\n200g light muscovado sugar<br \/>\n100ml dark or golden rum, brandy or Armagnac<br \/>\n1\u00bd teaspoons ground mixed spice<br \/>\n75g wholemeal breadcrumbs<br \/>\n100g plain flour<br \/>\n2 free range Woodland eggs, lightly beaten<\/p>\n<p>&nbsp;<\/p>\n<h4>Method:<\/h4>\n<p>Put all the ingredients except the breadcrumbs, flour and eggs in a saucepan and mix together. Heat gently until the butter and sugar have dissolved. Remove from the heat and leave to cool for 1 hour.<\/p>\n<p>Meanwhile, in a large bowl mix together the breadcrumbs and flour, then pour into the cooled fruit mixture. Add the eggs and stir to combine. Spoon into a buttered 1.2 litre pudding basin. Cover the top with a layer of greaseproof paper and a layer of foil, tying securely with string.<\/p>\n<p>Place the pudding basin onto an upturned saucer and place in a pan. Fill the pan with boiling water so it comes a third of the way up the sides of the basin. A saucer is usually used underneath the pudding basin to prevent the pudding being on a direct heat and overcooking.<\/p>\n<p>Bring to a boil and then reduce to a simmer. Cover the pan with a lid and cook for 8 hours, keeping the water level topped up. Remove the pudding basin using oven gloves. Remove the lid and invert the pudding onto a serving plate.
