{"id":15814,"date":"2020-06-19T10:00:00","date_gmt":"2020-06-19T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15814"},"modified":"2021-11-16T20:55:02","modified_gmt":"2021-11-16T20:55:02","slug":"spiced-mango-chutney","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/spiced-mango-chutney\/","title":{"rendered":"Spiced mango chutney"},"content":{"rendered":"<p>From Sainsbury&#8217;s<\/p>\n<p>Fantastically quick and easy homemade mango chutney.<\/p>\n<p>&nbsp;<\/p>\n<p>Serves: 6<br \/>\nPreparation time: 10 Minutes<br \/>\nCooking time: 25 Minutes<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>1 teaspoon coriander seeds<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/spiced%20mango%20chutney.jpg\" width=\"268\" height=\"235\" \/><br \/>\n1\/2 teaspoon cumin seeds<br \/>\n1\/4 teaspoon dried chilli flakes<br \/>\n1 tablespoon sunflower oil<br \/>\n1 medium onion, finely chopped<\/p>\n<p>2 medium mangoes, peeled and cut in small chunks<br \/>\n3 tablespoons soft, light brown sugar<br \/>\n4 tablespoons white wine vinegar<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Using a pestle and mortar, lightly crush the coriander and cumin seeds, then mix with the chilli flakes.<\/p>\n<p>Put the spices in a heavy-based saucepan and dry-fry until the aromas are released, then remove from the pan.<\/p>\n<p>Add the oil to the pan and cook the onions over a medium heat for 5 minutes until slightly browned. Add the spices, mango, sugar, and vinegar and 200ml water. Simmer for 20 minutes until thickened.
