{"id":15776,"date":"2020-01-10T10:00:00","date_gmt":"2020-01-10T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15776"},"modified":"2021-11-16T21:46:49","modified_gmt":"2021-11-16T21:46:49","slug":"pea-salted-yoghurt-and-mint-salad","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/pea-salted-yoghurt-and-mint-salad\/","title":{"rendered":"Pea, Salted Yoghurt and Mint Salad"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>Throw these ingredients together as a last-minute quick warm salad, or cook the peas in advance and refresh.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/peasaltedyoghurtandm_91778_16x9.jpg\" width=\"380\" height=\"217\" \/><\/h4>\n<p>200g\/7oz peas, out of their pods<br \/>\n1 long red chilli, seeds removed, finely chopped<br \/>\n1 garlic clove, peeled, finely chopped<br \/>\n\u00bd lemon, juice only<br \/>\n\u00bd tbsp extra virgin olive oil<br \/>\nsea salt flakes and freshly ground black pepper<br \/>\n100g firm, salted, strained yoghurt or fresh soft goats&#8217; cheese<br \/>\nsmall handful fresh mint leaves, torn<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Cook the peas in a pan of boiling, salted water for 1-2 minutes, or until tender. Drain well, then refresh in cold water until cold.<\/p>\n<p>In a large bowl, mix together the cooled, cooked peas, chilli, garlic, lemon juice and olive oil until well combined. Season, to taste, with salt and freshly ground black pepper.<\/p>\n<p>Break up the strained yoghurt or goats&#8217; cheese into bite-sized pieces and sprinkle over the pea mixture.
