If you happen to have leftovers, it&#8217;s also great for breakfast or dessert. For an extra sweet touch, add chopped fresh pineapple or use pineapple juice instead of orange juice.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/especially_good_sweet_potatoes.jpg\" alt=\"Sweet Potatoes\" width=\"335\" height=\"211\" \/><\/h4>\n<p>3 sweet potatoes (about 21\/2 pounds), peeled and cut into 1\/4-inch-thick rounds<br \/>\n1\/2 cup raisins<br \/>\n1\/2 cup unsweetened flaked or shredded coconut<br \/>\n11\/2 teaspoons freshly grated nutmeg<br \/>\n3\/4 cup unsweetened soy milk<br \/>\n1\/2 cup orange juice<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Preheat oven to 375\u00b0F.
