Serve with plain grilled chicken or fish for an easy summer meal.<\/p>\n<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/couscoussalad_1921_16x9.jpg\" alt=\"Couscous Salad\" \/><\/h4>\n<p>225g\/8oz couscous<br \/>\n1 bunch fresh parsley, chopped<br \/>\n1 bunch fresh coriander, chopped<br \/>\n1 red onion, very finely chopped<br \/>\n1 lemon, zest and juice<br \/>\n\u00bd cucumber, de-seeded and finely diced<br \/>\n30g\/1oz sunflower seeds, toasted<br \/>\n30g\/1oz sesame seeds, toasted<br \/>\n4 tbsp olive oil<br \/>\nsalt and freshly ground black pepper<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Cover the couscous with twice its volume of hot water and leave to soak for 10 minutes.<\/p>\n<p>Mix together with the remaining ingredients and leave to stand for 30 minutes to let the flavours develop.<\/p>\n<p>Serve your Couscous Salad at room temperature.<\/p>\n<p>&nbsp;<\/p>\n<p>Less than 30 mins preparation time<br \/>\nNo cooking required<br \/>\nServes 4-6<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A hearty couscous salad that is so simple to make.
