Enjoy the flavors as you enjoy a very affordable meal!<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/brown_rice_with_mushrooms.jpg\" width=\"409\" height=\"258\" \/><\/h4>\n<p>2 teaspoons extra-virgin olive oil<br \/>\n1\/4 pound sliced button mushrooms<br \/>\n2 portobello mushrooms, chopped<br \/>\n1\/2 small onion, chopped<br \/>\n1 cup long-grain brown rice<br \/>\n2 cups water or vegetable broth<br \/>\nSalt and ground black pepper<br \/>\n1\/2 cup chopped non-sulfite dried apricots<br \/>\n1\/2 cup chopped toasted walnuts<br \/>\n1\/4 cup total chopped fresh parsley and thyme<br \/>\n1\/2 teaspoon apple cider vinegar<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>In a medium saucepan, saut\u00e9 mushrooms and onions in warmed oil over medium-high heat, stirring often, about 6-8 minutes. Stir in rice, water or broth, salt &amp; pepper to taste and bring to a boil. Cover, reduce heat to medium-low and simmer until liquid is completely absorbed, about 45 minutes. Remove covered pot from heat and let sit 10 minutes; uncover and fluff with fork.
