{"id":15684,"date":"2017-07-27T10:00:00","date_gmt":"2017-07-27T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15684"},"modified":"2021-11-17T17:08:16","modified_gmt":"2021-11-17T17:08:16","slug":"broccoli-and-stilton-soup-with-stilton-croutons","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/broccoli-and-stilton-soup-with-stilton-croutons\/","title":{"rendered":"Broccoli and Stilton Soup with Stilton Cro\u00fbtons"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>Our creamy broccoli soup with bubbling Stilton croutons is the perfect antidote to the winter blues.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/broccoliandstiltonso_76390_16x9.jpg\" width=\"378\" height=\"216\" \/><\/h4>\n<p>350g\/12oz broccoli, florets and stalks cut into small pieces<br \/>\n400ml\/14fl oz vegetable stock<br \/>\n25g\/1oz butter<br \/>\n4 spring onions, finely sliced<br \/>\n50g\/1\u00beoz Stilton, crumbled, or to taste<br \/>\n100ml\/3\u00bdfl oz double cream<br \/>\nsalt and freshly ground black pepper<br \/>\npinch freshly grated nutmeg<\/p>\n<p>&nbsp;<\/p>\n<h4>For the cro\u00fbtons<\/h4>\n<p>4 slices French bread<br \/>\n100g\/3\u00bdoz Stilton, sliced<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>For the soup, place the pieces of broccoli into a glass bowl. Pour over the vegetable stock.<\/p>\n<p>Cover the bowl with cling film and place in the microwave. Cook on full power for four minutes, or until tender.<\/p>\n<p>Meanwhile, heat a frying pan until hot then add the butter. When it starts to foam, add the spring onions and cook for one minute.<\/p>\n<p>Transfer the cooked broccoli and stock to a food processor. Add the fried spring onions, Stilton and cream and blend until smooth.<\/p>\n<p>Transfer the blended mixture to a pan and bring gently to a simmer.<\/p>\n<p>Meanwhile, for the cro\u00fbtons, toast the French bread under a grill until golden-brown on each side.<\/p>\n<p>Top the grilled bread with the slices of Stilton and return to the grill until golden-brown and bubbling.<\/p>\n<p>Season the soup with salt, freshly ground black pepper and a pinch of nutmeg.<\/p>\n<p>Divide the soup equally among four warm bowls and top each with a Stilton cro\u00fbton.
