Our version is loaded with antioxidant-rich ingredients to help keep you healthy during this stressful season.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/hearty_turkey_noodle_soup.jpg\" width=\"392\" height=\"247\" \/><\/h4>\n<p>1 tablespoon extra virgin olive oil<br \/>\n2 cloves garlic, thinly sliced<br \/>\n1 yellow onion, chopped<br \/>\n2 teaspoons chopped thyme<br \/>\n3 1\/2 to 4 cups low-sodium chicken broth<br \/>\n2 cups baby spinach<br \/>\n2 cups cubed or shredded turkey or chicken<br \/>\n1 1\/2 cups uncooked wide egg noodles<br \/>\n1 (15-ounce) can cannellini beans, drained<br \/>\n1 (14.5-ounce) can sliced carrots, drained<br \/>\nSalt and pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Heat oil in a large pot over medium high heat. Add garlic and onions and cook for 3 minutes. Add thyme and stir to blend. Add broth, spinach, turkey, noodles, beans, carrots, and salt and pepper and stir well. Bring to a boil, reduce heat, cover and simmer about 15 minutes, or until noodles are tender.
