The pur\u00e9e can be made the day before and chilled overnight, and the rest takes minutes to put together.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>140g\/5oz watercress leaves, washed, roughly chopped<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/smokedtroutwithwater_92663_16x9.jpg\" width=\"382\" height=\"218\" \/><br \/>\n4 ice cubes<br \/>\n2 tbsp water<br \/>\nsalt and freshly ground black pepper<br \/>\n3 free-range eggs, hard-boiled, peeled, chopped<br \/>\n1 punnet mustard cress<br \/>\n8-10 cornichons, drained, sliced<br \/>\nsmall handful chopped fresh dill<br \/>\n1\u00bd tsp Dijon mustard<br \/>\n3 tbsp extra virgin olive oil, or rapeseed oil<br \/>\n\u00bd lemon, juice only<\/p>\n<p>&nbsp;<\/p>\n<h4>To serve<\/h4>\n<p>3 tsp soured cream, or cr\u00e8me fra\u00eeche<br \/>\n6 x 40g\/1\u00bdoz pieces smoked trout fillet<br \/>\n6 thin slices toasted soda bread, buttered<br \/>\n\u00bd lemon, cut into 6 wedges, to serve<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>For the watercress pur\u00e9e, bring a saucepan of salted water up to a rolling boil, then add the watercress and cover the pan with a lid. Once the water has returned to the boil, drain the watercress well, then refresh under cold water.<\/p>\n<p>Blend the drained watercress in a food processor with four ice cubes and two tablespoons of water. Turn the motor off and scrape a spatula down the insides of the food processor at intervals, then blend again, until the mixture forms a smooth pur\u00e9e. Season, to taste, with salt and freshly ground black pepper.<\/p>\n<p>Mix the chopped boiled eggs, mustard cress, cornichons and dill in a bowl until well combined.<\/p>\n<p>In a separate bowl, whisk together the mustard, oil and lemon juice and season, to taste, with salt and freshly ground black pepper. Then, pour over the egg mixture and stir well to combine.<\/p>\n<p>To serve, spoon the watercress pur\u00e9e into espresso cups or shot glasses. Drizzle half a teaspoon of soured cream or cr\u00e8me fra\u00eeche onto the surface of each serving, then place the cups or glasses onto six serving plates. Divide the egg salad, smoked trout and soda bread equally among the plates.
