{"id":15583,"date":"2016-07-27T10:00:00","date_gmt":"2016-07-27T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15583"},"modified":"2021-11-17T19:04:12","modified_gmt":"2021-11-17T19:04:12","slug":"orange-salt-cod-onion-and-black-olive-salad","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/orange-salt-cod-onion-and-black-olive-salad\/","title":{"rendered":"Orange, Salt Cod, Onion and Black Olive Salad"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>This clean, fresh-tasting recipe makes a great winter salad, when oranges are at their best.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/orange_salt_cod_onion_56427_16x9.jpg\" width=\"411\" height=\"235\" \/><\/h4>\n<p>500g\/1lb 2oz salt cod<br \/>\n3 large oranges, peeled, segmented<br \/>\n\u00bd small red onion, thinly sliced into rings<br \/>\n24 good-quality cured black olives, pitted<br \/>\n2 tbsp chopped flat-leaf parsley<br \/>\n1 hard-boiled egg, peeled and roughly chopped small<\/p>\n<p>&nbsp;<\/p>\n<h4>For the dressing<\/h4>\n<p>2 tbsp sherry vinegar<br \/>\n2 tbsp red or white wine vinegar<br \/>\n3 tbsp freshly squeezed orange juice from segmenting oranges<br \/>\n8 tbsp extra virgin olive oil<br \/>\nsalt and freshly ground black pepper<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Soak the salt cod in 3\u20134 litres of water in the fridge for 24\u201348 hours, depending on thickness. Change the water several times.<\/p>\n<p>Put the piece of soaked salt cod into a pan of cold water, bring to the boil, then cover and turn off the heat. Leave to sit for 10 minutes, then lift carefully onto a plate and leave to cool. Break into flakes, discarding the skin and any bones, cover and set to one side.<\/p>\n<p>Whisk the ingredients together for the dressing with half a teaspoon of salt in a small bowl. Put the flaked salt cod, orange segments, onion rings and olives into a mixing bowl and pour over the dressing. Add the parsley and mix together gently.
