{"id":15574,"date":"2016-07-06T10:00:00","date_gmt":"2016-07-06T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15574"},"modified":"2021-11-17T19:07:54","modified_gmt":"2021-11-17T19:07:54","slug":"lobster-lemongrass-lime-leaf-risotto","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/lobster-lemongrass-lime-leaf-risotto\/","title":{"rendered":"Lobster Lemongrass Lime Leaf Risotto"},"content":{"rendered":"<p>by Balmer Lawn Hotel Executive Chef Chris Wheeldon<\/p>\n<p>&nbsp;<\/p>\n<p>Serves: 4<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients:<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/img\/Balmer_Lawn_Lobster.jpg\" width=\"382\" height=\"300\" \/><\/h4>\n<p>1 native lobster<br \/>\n200 grams mussels<br \/>\n3 tablespoons butter, divided<br \/>\n1 glass white wine<br \/>\n3 lime leaves<br \/>\n1 litre kombu dashi stock (available from Asian supermarkets)<br \/>\n2 lemongrass sticks, bruised<br \/>\n1 tin coconut milk<br \/>\n1 shallot, finely diced<br \/>\n1 clove garlic, crushed<br \/>\n300 grams carnaroli or arborio rice<br \/>\nA few leaves of coriander and lemon balm for garnish<\/p>\n<p>&nbsp;<\/p>\n<h4>Directions:<\/h4>\n<p>Cook lobster for 8 minutes in boiling salted water then cool and crack the shells, and carefully remove the flesh.<\/p>\n<p>Check that all mussels are closed. Cook mussels in a tablespoon of butter and the white wine, pick mussels over, discard any that don\u2019t open. Keep any liquor and add to your dashi &#8211; be sure to strain it to remove any silt.<\/p>\n<p>Cut lime leaves as small as possible and add to your dashi with the lemongrass, and warm through; infuse for 1 hour then add the coconut milk.<\/p>\n<p>Sweat off the shallots and crushed garlic in 1 tablespoon of butter.<\/p>\n<p>Add the rice and cook for a few minutes.<\/p>\n<p>Add the dashi and coconut milk a little at a time stirring constantly.
