{"id":15529,"date":"2016-01-20T10:00:00","date_gmt":"2016-01-20T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15529"},"modified":"2021-11-17T19:18:07","modified_gmt":"2021-11-17T19:18:07","slug":"spaghetti-alla-carbonara","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/spaghetti-alla-carbonara\/","title":{"rendered":"Spaghetti alla Carbonara"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>Try Rick Stein&#8217;s recipe for a classic, creamy carbonara.<\/p>\n<h4>Ingredients<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/spaghettiallacarbona_86763_16x9.jpg\" \/><\/h4>\n<p>400g\/14oz dried spaghetti<br \/>\n175g\/6\u00bcoz piece smoked pancetta, rind removed<br \/>\n2 tbsp extra virgin olive oil<br \/>\n3 garlic cloves, finely chopped<br \/>\nhandful flatleaf parsley leaves, finely chopped<br \/>\n3 large free-range eggs, beaten<br \/>\n50g pecorino sardo maturo &#8211; mature, Sardinian pecorino grated<br \/>\nsalt and freshly ground black pepper, to taste<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Bring 4.5 litres\/8 pints water to the boil in a large saucepan with eight teaspoons salt. Add the spaghetti and cook for nine minutes, or until al dente.<\/p>\n<p>Meanwhile, cut the pancetta into lardons (short little strips), about 6mm\/\u00bcin wide.<\/p>\n<p>Heat a large, deep frying pan over a medium-high heat, add the oil and the pancetta and fry until lightly golden. Add the garlic and parsley and cook for a few seconds, then remove from the heat and set aside.<\/p>\n<p>Drain the spaghetti well, tip into the frying pan with the pancetta, garlic and parsley, add the beaten eggs and half the grated pecorino cheese and toss together well.<\/p>\n<p>Season to taste with a little salt and black pepper. The heat from the spaghetti will be sufficient to partly cook the egg, but still leave it moist and creamy.
