{"id":15454,"date":"2015-04-16T10:00:00","date_gmt":"2015-04-16T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15454"},"modified":"2021-11-17T19:31:21","modified_gmt":"2021-11-17T19:31:21","slug":"stuffed-chicken-breast-wrapped-in-pancetta","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/stuffed-chicken-breast-wrapped-in-pancetta\/","title":{"rendered":"Stuffed Chicken Breast wrapped in Pancetta"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>This chicken recipe is easy and impressive: it&#8217;s perfect for a dinner party.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>4 chicken breasts, skinless and boneless<br \/>\n4 tbsp cranberry sauce<br \/>\n300g\/10\u00bdoz gorgonzola cheese<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/stuffedchickenbreast_72067_16x9.jpg\" \/><br \/>\n24 slices of pancetta<br \/>\nItalian olive oil<br \/>\nsalt<br \/>\nfreshly ground black pepper<\/p>\n<p>&nbsp;<\/p>\n<h4>For the green bean salad<\/h4>\n<p>4 handfuls green beans<br \/>\n\u00bd lemon, juice only<br \/>\n3-4 tbsp olive oil<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Preheat the oven to 200C\/400F\/Gas 6.<\/p>\n<p>Place each chicken breast between two pieces of cling film and, using a meat mallet, bash out the pieces until about 0.5cm\/0.25in thick. Remove the cling film.<\/p>\n<p>Spread one tablespoon of cranberry sauce over each chicken breast. Place a piece of gorgonzola in the middle of each chicken breast, season and roll up the chicken to enclose the cheese.<\/p>\n<p>Place six slices of pancetta, side by side, on a chopping board. Place one chicken breast on the pancetta slices and tightly wrap pancetta around the chicken.
