{"id":15445,"date":"2015-03-18T10:00:00","date_gmt":"2015-03-18T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15445"},"modified":"2021-11-17T19:34:05","modified_gmt":"2021-11-17T19:34:05","slug":"savoury-steamed-custards","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/savoury-steamed-custards\/","title":{"rendered":"Savoury steamed custards"},"content":{"rendered":"<p>Photography by Steve Brown<\/p>\n<p>&nbsp;<\/p>\n<p>Proving that custard is not just limited to dessert, this creamy chicken, mushroom and prawn custard is a delight to the senses.<\/p>\n<p>Serves 4<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>2 small (250g total) chicken breast fillets, trimmed<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/Savoury%20steamed%20custards%20.jpg\" \/><br \/>\n1 tablespoon soy sauce<br \/>\n1 teaspoon sake<br \/>\n4 green prawns<br \/>\n50g enoki mushrooms, trimmed<br \/>\n4 eggs<br \/>\n1 1\/4 cups fish stock<br \/>\n1 tablespoon mirin<br \/>\nwatercress sprigs, to garnish<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Cut chicken into 2cm cubes. Place into a bowl. Add soy sauce and sake. Toss until well combined. Cover and refrigerate for 15 minutes.<\/p>\n<p>Preheat oven to 190\u00b0C. Remove shells from prawns, leaving heads and tails intact. Use a bamboo skewer to remove veins. Place into a heatproof bowl. Cover with boiling water. Stand for 30 seconds. Drain. Pat-dry with paper towels.<\/p>\n<p>Divide chicken mixture between 4 x 1\/2-cup capacity ceramic ramekins. Top with prawns and mushrooms.<\/p>\n<p>Combine eggs, stock and mirin in a jug. Stir gently with a fork until well combined (do not beat to form froth or bubbles). Pour custard into ramekins. Cover tightly with foil. Place into a baking dish. Pour enough boiling water into baking dish so it comes three-quarters of the way up sides of ramekins.<\/p>\n<p>Bake for 25 to 30 minutes, or until custards are set. Serve immediately topped with watercress.<\/p>\n<p>&nbsp;<\/p>\n<h4>Notes<\/h4>\n<p>Hint: This dish is usually cooked in Japanese chawans (soup cups), which are little ceramic bowls with fitted lids.
