{"id":15350,"date":"2014-06-25T10:00:00","date_gmt":"2014-06-25T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15350"},"modified":"2021-11-17T19:45:48","modified_gmt":"2021-11-17T19:45:48","slug":"herbed-beef-roast-with-beer","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/herbed-beef-roast-with-beer\/","title":{"rendered":"Herbed Beef Roast with Beer"},"content":{"rendered":"<p>From Stop and Shop<\/p>\n<p>&nbsp;<\/p>\n<p>Bake flaky biscuits from the dairy case to take advantage of the pan juices.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/herb%20beef%20beer.jpg\" width=\"240\" height=\"240\" \/><\/h4>\n<p>3 pound blade-in beef chuck roast, trimmed of all external fat<br \/>\n2 tsp dried thyme leaves<br \/>\n2 bay leaves, crumbled<br \/>\n2 tsp garlic, minced<br \/>\n1\/2 tsp each salt and freshly ground black pepper<br \/>\n1 tbsp olive oil<br \/>\n1 cup beer<br \/>\n2 cups carrots, peeled and cut into 2<br \/>\n2 medium onions, peeled and cut into wedges<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Pat roast dry.<\/p>\n<p>Mix herbs, garlic and seasonings together in a small bowl. Rub into roast.<\/p>\n<p>Heat oil in Dutch oven or large saucepan over medium-high heat. Brown roast on both sides. Reduce heat and add beer.<\/p>\n<p>Heat to boiling, immediately reduce heat and simmer, covered for 1-1\/2 hours.<\/p>\n<p>Add carrots and onions and 1\/2 cup water.
