{"id":15328,"date":"2014-05-21T10:00:00","date_gmt":"2014-05-21T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15328"},"modified":"2021-11-17T19:46:37","modified_gmt":"2021-11-17T19:46:37","slug":"corned-beef-hash-with-poached-eggs","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/corned-beef-hash-with-poached-eggs\/","title":{"rendered":"Corned Beef Hash with Poached Eggs"},"content":{"rendered":"<p>From BBC Food<\/p>\n<p>&nbsp;<\/p>\n<p>This tasty brunch dish is quick and easy to make.<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>For the corned beef hash<img decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/cornedbeefhashwithfr_78048_16x9.jpg\" \/><br \/>\n4 potatoes, diced into cubes<br \/>\n3 tbsp olive oil<br \/>\n1 onion, finely diced<br \/>\n1 garlic clove, crushed<br \/>\n340g\/12oz corned beef, tinned<br \/>\nSalt and freshly ground black pepper, to taste<br \/>\n1 tbsp vinegar<br \/>\n1-2 free-range eggs (per person)<br \/>\nTomato ketchup, to serve<\/p>\n<p>&nbsp;<\/p>\n<h4>For the cornbread<\/h4>\n<p>300g\/10\u00bdoz plain flour<br \/>\n315g\/11oz cornmeal<br \/>\n200g\/7oz icing sugar<br \/>\n1 tbsp baking powder<br \/>\n1 free-range egg<br \/>\n250ml\/9fl oz milk<br \/>\n200g\/7oz butter, melted<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>For the corned beef hash, place the potatoes into a saucepan and cover with water. Bring to the boil and simmer until just tender. Drain and set aside.<\/p>\n<p>Heat a frying pan until hot. Add one tablespoon of the olive oil, the onion and garlic and fry for two to three minutes.<\/p>\n<p>Add the potatoes and fry for a further minute.<\/p>\n<p>Crumble in the corned beef and mix together.<\/p>\n<p>Spoon the mixture into a soup dish then place under the grill for three to four minutes, until crusty.<\/p>\n<p>Bring a pan of water to the boil, add the vinegar and whirl the water around.<\/p>\n<p>Crack an egg into a ladle. Pour the egg into the pan and simmer for two minutes, until ready. Remove from the pan and drain.<\/p>\n<p>Remove the hash from the grill and top with the egg.<\/p>\n<p>Top with a squeeze of ketchup and serve with hot, buttered corn bread.<\/p>\n<p>For the cornbread, mix together the flour, cornmeal, icing sugar and baking powder.<\/p>\n<p>Make a well in the centre of the dry ingredients and add the milk and egg. Mix together from the centre outwards, incorporating the dry ingredients into the wet gradually to create a dough-like paste. Add the melted butter last.<\/p>\n<p>Place in a hot baking tin. Place in a hot oven for about 15 minutes until golden brown.<\/p>\n<p>Remove from the oven, allow to cool slightly.
