{"id":15302,"date":"2014-04-03T10:00:00","date_gmt":"2014-04-03T09:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15302"},"modified":"2021-11-17T19:48:59","modified_gmt":"2021-11-17T19:48:59","slug":"beef-rib-roast-with-browned-vegetables","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/beef-rib-roast-with-browned-vegetables\/","title":{"rendered":"Beef Rib Roast with Browned Vegetables"},"content":{"rendered":"<p>From Stop and Shop<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>1 beef rib eye roast, small end<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/beef%20rib%20vegetables.jpg\" width=\"195\" height=\"195\" \/><br \/>\n3 cloves garlic, minced<br \/>\n1 1\/2 tsp lemon pepper<br \/>\n8 small red-skinned potatoes, cooked<br \/>\n8 boiling onions, cooked<br \/>\n8 carrots, cut into 2&#8243; pieces, cooked<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Heat oven to 350\u00b0F.<\/p>\n<p>Combine garlic and lemon pepper press on to beef roast.<\/p>\n<p>Place roast, fat side up, in shallow roasting pan. Insert meat thermometer so tip is centered in thickest part of beef. Do not add water or cover.<\/p>\n<p>Roast for 2-1\/4 to 2-1\/2 hours for medium rare, 2-3\/4 to 3 hours for medium doneness. Remove roast when meat thermometer registers 135\u00b0F for medium rare, 150\u00b0F for medium.<\/p>\n<p>Transfer to board, tent with foil. Let stand 15-20 minutes. (Temperature will continue to rise about 10\u00b0F.)<\/p>\n<p>Remove all but 2 tablespoons drippings from pan. Add vegetables, cook over medium-high heat 5 minutes or until lightly browned, stirring occasionally.
