{"id":15295,"date":"2014-01-16T10:00:00","date_gmt":"2014-01-16T10:00:00","guid":{"rendered":"https:\/\/www.mostlyfood.co.uk\/?p=15295"},"modified":"2021-11-17T19:55:59","modified_gmt":"2021-11-17T19:55:59","slug":"autumn-beef-roast","status":"publish","type":"post","link":"https:\/\/www.mostlyfood.co.uk\/index.php\/autumn-beef-roast\/","title":{"rendered":"Autumn Beef Roast"},"content":{"rendered":"<p>From Stop and Shop<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients<\/h4>\n<p>3 pounds boneless chuck roast, bottom round or rump roast<img loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/www.mostlyfood.co.uk\/Recipes\/autumn%20beef%20roast.jpg\" width=\"195\" height=\"195\" \/><br \/>\n1\/2 tsp salt<br \/>\n1 Tbsp canola oil<br \/>\n2 cups apple cider<br \/>\n6 whole black peppercorns<br \/>\n6 whole cloves<br \/>\n2 bay leaves<br \/>\n1 pound fresh carrots, peeled and sliced<br \/>\n1 pound yellow onions, peeled and quartered<br \/>\n1 1\/2 pounds white potatoes, peeled and cut into wedges<br \/>\n1\/4 cup all-purpose flour<br \/>\n3\/4 cup water, divided<\/p>\n<p>&nbsp;<\/p>\n<h4>Method<\/h4>\n<p>Trim fat from roast. Pat roast dry with clean paper towels, rub salt into roast.<\/p>\n<p>Heat oil in a large Dutch oven or large saucepan over medium-high heat. Add roast and brown on all sides.<\/p>\n<p>Add apple cider, peppercorns, cloves and bay leaves. Reduce heat to low, cover with a tight fitting lid. Simmer for a total of 2 hours, turning roast occasionally.<\/p>\n<p>During the last 45 minutes add vegetables and 1\/2 cup cold water, recover pan. Continue to simmer until meat and vegetables are tender. Transfer meat and vegetables into serving dishes, cover and keep warm.<\/p>\n<p>Strain liquid into a 2-cup measuring cup and discard peppercorns, cloves and bay leaves. If necessary, add enough water to juices to equal 2 cups. Return to Dutch oven. Stir flour and remaining 1\/4 cup cold water together in a small cup. Whip into juices. Cook and stir over medium heat until thickened and bubbly.<\/p>\n<p>Cook and stir for 1 more minute. Ladle sauce atop sliced beef.
