Vanilla Rice Pudding
Vanilla pods are one of the most loved ingredients in the
kitchen but can certainly be one of the more fiddly to use. Now,
purveyors of fine food, Porter Foods, have created a delicious Vanilla
Bean Paste that contains real Madagascan vanilla seeds and can be used
in place of vanilla pods with no compromise to quality or
flavour. The Vanilla Bean Paste comes in a squeezy bottle or in
handy sachets, 4 to a pack, and to use you simply replace one sachet
when a vanilla pod is required. The vanilla seeds will disperse
evenly throughout yoghurt, ice-cream, cheesecakes, in baking, smoothies
or whatever recipe you decide to use them for. The paste gives
the authentic taste and texture as if using straight from the pod.

Ingredients
150g Arborio Risotto Rice
550ml full-cream milk
25g unsalted butter
100g caster sugar
2 sachets of Porter Foods Vanilla Bean Paste
200ml crème fraîche
Preheat the oven to 200C/180C fan/gas mark 6. Bring a
medium size ovenproof dish of water to the boil. Add the rice an boil
for 5 minutes, then drain it. Place the milk, butter and sugar in the
same pan and bring to the boil. Add the Porter Foods Vanilla Bean
Paste, then cover with a circle of parchment paper, then the lid. Place
the dish in the oven, turn down the heat to 150C/130C fan/gas mark 2
and cook for 40 mins by which time the rice should be tender. Let the
rice cook and allow to absorb the milk. Stir in the crème
fraîche and chill for several hours. Serve at room temperature
with
poached fruits.
Vanilla Bean Paste is much easier and cheaper to use than vanilla
pods. Each pack contains 4 x 9g sachets and RRP is
