Tropical Lemon Pavlova Verrine

Serves 4
Preparation time: 10-15 minutes
Cooking time: none

Ingredients
125ml (4floz) double cream
45ml (3 tbsp) good quality lemon curd
¼ mango, peeled, stoned and diced
2 passion fruit
¼ banana, halved lengthways and sliced
1 individual ready-made meringue nest, roughly crushed
1 kiwi, peeled and diced

Method
1. Whip the cream in a bowl until only just beginning to slightly thicken and then gently stir in the lemon curd.

2. Divide the mango, half of the passion seeds and banana between the verrines.

3. Top with cream mixture, then meringue, kiwi fruit and remaining passion seeds. Chill until ready to serve.
