Tequila Lime Salmonrecipe

Serves 4

This brightly flavored seafood main course is a cinch to make, combining winter's best citrus with a mild, tequila-flavored salsa. Serve with plenty of brown rice and steamed or sautéed greens to soak up the good stuff.

Ingredients
4 (3-ounce) fillets skin-on, farm-raised salmon
1 1/2 teaspoons extra-virgin olive oil
1/2 teaspoon fine sea salt
1/2 cup 365 Everyday Value® Tequila Lime Salsa
1 grapefruit, peel and pith removed, cut into segments
1 tangerine or mandarin orange, peel and pith removed, cut into segments

Method
Preheat oven to 400°F. Arrange salmon skin-side down on a parchment-paper-lined baking sheet. Brush all over with oil and season with salt. In a medium bowl, combine salsa, grapefruit and tangerine, spoon evenly over salmon and bake until just cooked through, about 10 minutes. Serve with additional salsa on the side, if you like.
