Spiced mango chutney

Fantastically quick and easy homemade mango chutney.

Serves: 6recipe
Preparation time: 10 Minutes
Cooking time: 25 Minutes

Ingredients

    1 teaspoon coriander seeds
    1/2 teaspoon cumin seeds
    1/4 teaspoon dried chilli flakes
    1 tablespoon sunflower oil
    1 medium onion, finely chopped

    2 medium mangoes, peeled and cut in small chunks
    3 tablespoons soft, light brown sugar
    4 tablespoons white wine vinegar

Method
Using a pestle and mortar, lightly crush the coriander and cumin seeds, then mix with the chilli flakes.
   
Put the spices in a heavy-based saucepan and dry-fry until the aromas are released, then remove from the pan.
   
Add the oil to the pan and cook the onions over a medium heat for 5 minutes until slightly browned. Add the spices, mango, sugar, and vinegar and 200ml water. Simmer for 20 minutes until thickened. Cool in a bowl and then serve.
