Pasta Primavera
Ingredients:
50 g fresh organic pasta
spirals or quills
1tbsp olive oil
Handful mixed organic mange tout, organic baby sweet corn,
organic sugar-snap peas, organic carrot sticks, organic red and green
peppers and organic bean sprouts,
1tsp organic pesto sauce
2tsp organic natural yogurt
Salt and freshly ground black pepper
Method:
Cook the pasta according to the packet
instructions. Drain and keep warm.
Heat the oil in a deep frying-pan or wok, and add the mixed vegetables.
Toss over a high heat for 1 minute.
Add the pasta and the pesto sauce. Turn for 30 seconds. Remove from the
heat, add the yogurt, season to taste with salt and pepper and serve
immediately.
