50 g fresh organic pasta spirals or quills
1tbsp olive oil
Handful mixed organic mange tout, organic baby sweet corn, organic sugar-snap peas, organic carrot sticks, organic red and green peppers and organic bean sprouts,
1tsp organic pesto sauce
2tsp organic natural yogurt
Salt and freshly ground black pepper
Cook the pasta according to the packet instructions. Drain and keep warm.
Heat the oil in a deep frying-pan or wok, and add the mixed vegetables. Toss over a high heat for 1 minute.
Add the pasta and the pesto sauce. Turn for 30 seconds. Remove from the heat, add the yogurt, season to taste with salt and pepper and serve immediately.
