Organic Spicy Scones with Fruit Conserve

Spicy cinnamon scones ideal to serve with fruit conserve and crème fraîche.

Serves: Makes 16recipe
Preparation time: 15 Minutes
Cooking time: 15 Minutes

Ingredients

    250ml organic low fat natural yogurt
    100ml organic milk ( plus 2 tablespoons for the glaze)
    75g organic Argentinian clear honey
    625g organic plain flour
    1½ teaspoons baking powder
    1½ tablespoons organic caster sugar

    1 teaspoon ground cinnamon
    125g organic butter, cut into small pieces
    1 medium organic egg yolk
    225g pot organic apricot conserve
    200ml pot organic crème fraîche.

Method
    Preheat the oven to 200°C, fan 180°C, gas 6. Combine the yogurt, milk and honey in a jug. In a bowl, mix together the plain flour, baking powder, sugar and ground cinnamon.
    Add the butter and rub into the dry ingredients until the mixture resembles fine breadcrumbs. Make a well in the centre of the dry ingredients, then gradually mix in the liquid until it forms a very soft dough.
    Turn the dough onto a lightly floured surface and pat out or gently roll to a thickness of 2cm. Cut the dough into rounds using a 7cm pastry cutter, re-shaping as necessary to make a total of 16 scones.
    Place the scones on two non-stick baking trays, leaving them 5cm apart. Glaze with the combined egg yolk and milk, bake for 15 minutes or until golden brown. Serve with the conserve and crème fraîche
