Mini Rarebit Toasts

From Sainsbury's

A rich cheesy topping with a tangy finish.. a tasty recipe from the January issue of Sainsbury's magazine.

Serves: 24-28recipe
Preparation time: 15 Minutes
Cooking time: 20 Minutes

Ingredients:
2 tablespoons plain flour
2 tablespoons soft butter
150ml milk
150g ready grated extra mature cheddar
2 teaspoons English or grainy mustard

1 large egg
6-7 slices bread
2-3 tablespoons Taste the Difference caramelised onion chutney
24-28 flat-leaf parsley leaves

Method:
Heat the flour, butter and milk in a pan, whisking until thick and smooth; take off the heat. Preheat the grill.
   
Whisk in the cheese, mustard, egg and a pinch of salt. Toast the bread on both sides, trim the crusts and cut into squares. Spread the rarebit mixture on to each toast square,
grill for 4-5 minutes or until golden and bubbling. Top with a little chutney and a parsley leaf.

Cook's tip:  Get ahead Make the rarebit topping a few hours ahead.
