Give dishes a lift with this homemade spice mix.
Makes 3 1/2 tbs
1 tbs dried parsley leaves
1 tbs dried basil leaves
2 tsp dried oregano leaves
2 tsp fennel seeds
1 tsp garlic powder
1 tsp finely grated lemon rind
Combine the parsley, basil, oregano, fennel and garlic powder in a small bowl.
Just before using, add the lemon rind and use your fingertips to combine.
How to use it: Toss with potato wedges, or sprinkle over halved tomatoes before roasting.
Combine the spice mix, finely chopped brown onion and fresh breadcrumbs.
Use as a stuffing for roast meats.
For Mediterranean chicken skewers, preheat a barbecue grill or chargrill on high. Sprinkle the spice mix over the chicken skewers. Cook on grill until cooked. Serve with tomato, basil and red onion salad.
