Indian-style
lamb pizzas

Serves 4
Ingredients
300g kumara (orange sweet potato), peeled, cut into
5mm-thick slices
300g lamb loin
1 tablespoon garam masala
extra light olive oil cooking spray
400g packet naan bread
1/3 cup mango chutney
1 small red onion, halved, thinly sliced
40g snow pea sprouts, trimmed, to serve
Method
Preheat oven to 220°C. Place kumara on a
microwave-safe plate. Microwave on HIGH (100%) power for 3 to 4 minutes
or until just tender. Drain on paper towels.
Slice lamb into 1cm-thick slices. Combine with 3
teaspoons garam masala.
Spray a frying pan with oil. Heat over high heat.
Cook lamb, in batches, for 1 minute or until sealed.
Place naan onto 2 baking trays. Spray 1 side of
bread lightly with oil. Sprinkle with remaining garam masala. Bake for
8 to 10 minutes or until golden. Top with chutney, kumara, onion and
lamb. Bake for 8 to 10 minutes or until warmed through. Top with
sprouts. Serve.
